Grain Free – Sugar Free Granola Cereal

This low carb cereal for the Keto Athlete (or not), is the recipe you’ve been waiting for!  This recipe is totally GRAIN FREE, as it is made with Almond Flour, Hemp Seeds and Flaked Coconut!  You are going to be blown away by this cereal, especially if cereal has been a thing of the past for you since switching to low carb and sugar free!

INGREDIENTS:

1 1/2 cup Almond Flour (purchased or just blend up your own)

1 cup Hemp Seeds

1 cup Chopped Walnuts/Pecans (or any nuts you prefer)

1 cup Unsweetened Flaked Coconut

1/2 cup Swerve Sweetener (does not have to be that name brand – this can be a blend granule of Erythritol and Stevia) *I tend to use less sweetener as I don’t need it that sweet, so base on your taste

1/4 tsp Salt

3 tbsp Melted KerryGold Butter

1 – 2 tsp Vanilla Extract

1 Large Egg

DIRECTIONS:

  1. Preheat oven to 300 F and line a large rimmed baking sheet with parchment paper.
  2. In a large bowl, whisk together the Almond Flour, Hemp Seeds, Nuts, Coconut, Sweetener and Salt.
  3. Stir in butter, extract and egg until mixture begins to clump together.  Spread mixture out onto prepared baking sheet and press down to help clump it together.
  4. Bake for about 25 minutes, stirring 2 or 3 times, until beginning to brown.  Turn off oven and let cereal sit inside for 5 to 10 minutes more.

SERVES 10 – Each serving has 12.95 of CARBS and 8.17 g of FIBER – Total NET CARBS – 4.78

Calories – 446 kcal, FAT – 38.38 g, CARBS – 12.95 g/Net 4.78 g, PROTEIN – 13.19 g
